If you are on a self-catering holiday and shopping for food in the markets, you will be able to choose from a wide variety of vegetables, depending on the season. Glossy aubergines, large, misshapen but delicious tomatoes and courgettes, and wonderfully fresh spinach will help you make authentic Mediterranean dishes to accompany the fresh fish that glistens on beds of ice, or meat, which is cut to order by the butcher.
